It’s officially summer! *Cue “In the Summertime” by Mungo Jerry. After a long, cold winter in Chicago, I’m ready to bathe in the sunshine, take a dip in Michigan Lake and end my warm summer days watching fireworks off Navy Pier.

With summer comes more daylight hours, and that gives us more time to enjoy life. When I think of summer, I think of spending time with friends and family, cooking out and being outdoors.

Food allergies may feel restrictive, and act as a barrier between you and the fun that surrounds you, but it’s easy to eat freely with the help of Enjoy Life Foods. Aside from the beach, street festivals, firework shows and more, one of my favorite summer activities is preparing delicious allergy-friendly foods. I’m an avid baker during cold winter months, but what’s even more fun (and often more delicious) is preparing chocolate-filled desserts that don’t require turning the oven on. Desserts meant to be enjoyed under the summer sun hold a special place in my heart. I make these summer-esque dairy-free desserts with a variety of ingredients you wouldn’t typically expect to find in a rich, chocolatey treat: chick peas, black beans, dairy-free milk, and of course my favorite Enjoy Life product, Dark Chocolate Morsels (bonus points: Dark Chocolate Morsels are certified vegan)!

I hope you enjoy summer and the delicious food that comes with more hours in the day as much as I do. I’ve rounded up a few of my favorite gluten- and dairy-free recipes that will satisfy any chocoholic:

  1. Frozen Chocolatey Nana Nutters: Frozen bananas dipped in Enjoy Life’s dairy-free chocolate are the perfect treat to cool you down from the hot summer sun. I have found these are best enjoyed with friends and family in the park or by a pool.
  2. Overnight Chia Pudding: Grab & go gluten-free breakfasts are always a convenient option for when you’re in a rush to get to the beach! This overnight chia pudding is packed with protein and better-for-you ingredients.
  3. Chocolate Avocado Mousse: Dairy-free chocolate. Avocado. Need I say more? I always end my night with this light, creamy mousse.
  4. Dark Chocolate Covered Plentils: As if I needed another reason to consume more Dark Chocolate Morsels. This combination of sweet and salty is just too good to resist – and this recipe only takes a few minutes to make!
