Chocolate Chip Granola Bars

14 granola bars
prep time 1 hour .


  • 2 1⁄4 cups gluten free quick oats
  • 1 cup puffed rice cereal
  • 1⁄4 cup + 2 tbsp ground flaxseed
  • 1/2 cup Enjoy Life Semi-Sweet Mini Chips
  • 1/2 tsp salt
  • 1/4 cup + 2 tbsp sunflower seed butter (or other seed butter)
  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey
  • 2 tbsp water
  • 1 tsp pure vanilla extract


  1. Add the sunflower seed butter, honey, applesauce, water, vanilla, and salt to a large bowl and mix until smooth. Next, add in the oats, puffed rice cereal, ground flaxseed, and mini chocolate chips and mix until well combined.
  2. Once mixed, pour the mixture into an 8x8 square pan lined with parchment paper and gently press the mixture down using a separate sheet of parchment paper.
  3. Bake at 350°F for 25 -30 minutes, or until firm and lightly browned. Once baked, remove from the oven and cool completely in the pan.
  4. Once cooled, slice into bars and enjoy!
