Creamy Avocado-Dill Dip
- ½ bag 4 oz. Enjoy Life Foods Dill & Sour Cream Plentils
- 1 medium avocado
- Zest and juice from 1 lemon
- ½ C. white beans
- 1 garlic clove, peeled
- 2-3 T. olive oil
- 1 Pinch of salt
- Garnish: 2 T. minced fresh dill, lemon zest
- Place everything except the garnish in a food processor. Blend until smooth, adding more olive oil or a bit of hot water to thin out as needed.
- Taste for seasoning, adding more salt if needed.
- Serve with your favorite sliced veggies and, of course, more Plentils for dipping!
