3-Ingredient Snack Bites

makes 20-22 bites

Ingredients

  • 1 c. purity protocol gluten-free old fashioned oats
  • ½ c. + 2 Tbls. sunflower seed butter
  • ½ c. Enjoy Life Foods Mini Chips
  • Optional add-ins: 1 tsp. cinnamon, ¼ c. chopped dried cherries or cranberries, 2 Tbls. hempseeds or 2 Tbls. chopped pumpkin seeds

Instructions

  1. Place all but 3 Tbls. of the oats in the bowl of a small food processor. Pulse until you have a coarse flour.
  2. Mix together the coarse oat flour, remaining whole oats, sunflower seed butter, and Enjoy Life Foods Mini Chips until well combined.
  3. Scoop out into about 20-22 portions and roll into balls.
  4. Place in the refrigerator in a resealable container and enjoy for up to one week!
