Cinnamon Roll Muffins

Adapted from www.KeeleyMcGuire.com When was the last time you had a good cinnamon roll? The ones that have the slight crunch on the outside and a gooey, doughy inside that just melts in your mouth? Enter the Cinnamon Roll bars. It makes for an amazing "Breakfast for Lunch" packed for both kids and parents. INGREDIENTS: Optional Glaze:
  • 1/2 C. of confectioners sugar
  • 1/4 t. of vanilla
  • 2 T. of non-dairy milk
DIRECTIONS:
  1. Preheat oven to 350°. Line a muffin tin and set aside.
  2. In a food processor, process the Decadent Bars until they make a smooth crumble (approx. 5 minutes).
  3. In a mixing bowl, blend your dry ingredients - flour, baking powder and cinnamon.
  4. Add the applesauce, vanilla, and milk and mix until smooth.
  5. Fold in the Decadent Bar crumbles.
  6. Fill baking tins almost full and bake for 35 minutes.
  7. Remove from oven and let cool for five minutes.
  8. Drizzle optional glaze over top.
  9. Serve & enjoy!
