Looking for a vegan and gluten-free take on delicious, melt-in-your-mouth doughnuts? We’ve got it!
Makes 24 mini doughnuts
- 2 t. ground cinnamon
- ½ c. water
- ¼ c. + 1 T. oil
- Toppings: ½ c. cane sugar+1 T. ground cinnamon or 1 c. powdered sugar + 2-3 T. water
- Preheat oven to 350. Use a small brush to lightly grease the well of a mini doughnut pan. Set to the side.
- Add the Enjoy Life Foods Muffin mix to a large bowl. Mix in the ground cinnamon. Whisk in water and oil until smooth.
- Spoon into the wells of the greased muffin tin* and place in the oven to bake for 9-10 minutes.
If using the cinnamon sugar topping, toss the doughnuts in the sugar immediately after taking out of the oven. If using the powdered sugar drizzle let the doughnuts cool and then drizzle with the glaze. Let dry for an hour or so.
