Ingredient Glossary

Applesauce, unsweetened

Just fresh apples and good ol’ H20. Nothing else added. It helps keep our goodies moist & chewy.

Baking soda

Also known as sodium bicarbonate. Like all great bakeries, we use this all-natural ingredient to help our goodies rise.

Brown pure cane sugar

We use only pure brown cane sugar in our soft cookies, which is a natural combination of sugar and molasses refined without any added colorings, flavorings or coatings. Formed using the traditional method of crystallization; each brown sugar crystal is brown all the way through. It gives a rich, sweet, natural flavor and consistent quality to our treats.

Brown rice flakes

These crunchy flakes are made from flattened and toasted brown rice. They work great to mimic the great crunch of oats in our cookies, chewy bars and granolas.

Brown rice flour

This flour comes from unpolished brown rice. It has more nutritional value than white rice flour because it includes bran from the hull of the grain.

Brown rice syrup, organic

The syrup we use is a certified gluten-free sweetener made from soft cooked rice. We use it to bind and sweeten our chewy bars just the right amount.

Buckwheat Flour

Despite its name, Buckwheat Flour is unrelated to wheat. Its’ closest edible relative is rhubarb. A popular grain through Asia and the former Soviet Union, Fagopyrum esculentum, or common buckwheat, is commonly milled and used in noodles, as a grain on its own, in blinis, and in combination with other flours in breads. High in proteins and essential amino acids, it is also a good source of iron, zinc and selenium. Our certified gluten-free buckwheat flour is ground to our specifications in a dedicated gluten-free facility. We combine it with other flours to create our signature gluten-free flour blend for our crunchy cookies.

Chocolate chips

Our chocolate chips are produced for us in a dedicated gluten-free and nut-free facility. These chips are also dairy-free and soy-free, although they are produced in a plant that contains dairy. For this reason, we test down to 2.5 parts per million for dairy before the chips arrive in our bakery to ensure the highest levels of safety and quality.

Cinnamon

A warm and favorite spice derived from the bark of the evergreen tree, Cinnamomium Cassia. We use grade A — the best quality available.

Citric Acid

Citric acid is found in high concentrations in citrus fruits – lemons, limes, grapefruits, oranges, etc. Like xanthan gum, it is produced when a specific bacteria is allowed to ferment on a corn sugar medium. Although it does not contain corn, it is derived from corn.

Cocoa butter, non dairy

Cocoa butter is a component in our chocolate chips and, despite its name, is dairy-free. After the cocoa bean is extracted from the shell, the bean is then ground into a liquid called chocolate liquor. From that point, the fat is extracted from the liquor, which is called cocoa butter (non-dairy of course). Once the cocoa butter is removed all that remains is cocoa powder.

Cocoa liquor

Cocoa Liquor, also called Cocoa Mass, Chocolate Liquor or Cacao Liquor, is the dark brown, fat-free antioxidant-rich component of the cocoa bean that is derived when the bean is ground and the fat is separated out. We use cocoa liquor in our Boom Choco Boom bars and as an ingredient in our chocolate chips. Unsweetened cocoa liquor is very bitter, but very healthy, as it contains nutrients such as minerals magnesium, iron, zinc and calcium as well as antioxidants.

Cocoa powder, natural process

We use unsweetened cocoa powder, which is made from naturally processed cocoa solids that remain after chocolate liquor is pressed to extract cocoa butter. It is totally free of dairy and soy. Cocoa powder gives a deep, rich flavor to our cookies, granola and snack bars. Though it seems too good to be true, cocoa is as healthy as it is tasty. It is the highest natural source for magnesium.

Cranberries

Clearly not just for Thanksgiving any more, cranberries seem to be everywhere these days, including our granola, snack bars and Seed and Fruit mix. Cranberries have high antioxidant content and a tart, tangy flavor we just love. Ours are sulfite-free too.

Crisp Rice / Crunchy Rice / Crunchy Rice Cereal

Made out of Rice Flour, Rice Bran, Raisin Juice Concentrate, Honey, Salt, these crispy bit of puffed rice bring the perfect crunch to some of our favorite treats!

Crystallized Ginger

Ginger is a spice that is the dried and peeled root of the ginger plant.

Date paste

Made purely from dates, this ingredient helps to keep our cookies and snack bars moist. Because dates contain natural sugars, the paste allows us to make sweet treats without adding too much cane sugar.

Dehydrated Parsley

Dehydrated parsley is used as a spice and flavoring agent.

Dextrose

Dextrose is a non-GMO corn that is used as a carrier and emulsifier.

Distilled Vinegar

Distilled vinegar is derived from white vinegar and used as a flavoring agent.

Dried Apples

Our apples air dried and diced. They add a nice tang to treats! They’re sulfite-free as well!

Enjoy Life Crunchy Vanilla Honey Graham Cookie Pieces

This one’s simple – we take our Vanilla Honey Graham Crunchy Cookies and break them up into pieces to add that great vanilla honey graham flavor!

Evaporated Cane Juice/Evaporated Cane Juice Crystals/Organic Evaporated Cane Juice

Evaporated cane juice is an alternative to refined sugar. While both sweeteners are made from sugar cane, evaporated cane juice doesn’t undergo the same degree of processing that refined sugar does. Therefore, unlike refined sugar, it retains a few more nutrients.

Also listed as “evaporated cane juice crystal” and “evaporated cane juice crystals” and “organic evaporated cane juice”

Expeller Pressed Vegetable Oil (Safflower and/or Sunflower Oil)

Safflower and sunflower oils are high in unsaturated fatty acids, highly stable, and boast significant levels of Vitamin E. Expeller pressing is a chemical-free mechanical process that extracts oil from seeds and nuts. This is a healthier, allergy-friendly cooking oil.

Flaxseed (Ground/Golden)

Made from pure ground flax seed, it is a great source of Omega-3 fatty acids. Flax brings a nice “nutty” flavor, along with a good share of fiber and protein to our products. Flaxseed contains both soluble and insoluble fiber.

Flour Mix (White Rice, Buckwheat, Millet)

Our unique gluten-free flour blend is comprised of White Rice Flour, Buckwheat Flour and Millet Flour. By blending these three ancient grains together, we create not only a delicious blend, but healthy blend of flours for great tasting gluten-free baked goods!

Freeze Dried Raspberries

Just like it sounds; berries that have been freeze dried. They offer a great sweet and tangy crunch, and are a great source of Vitamin C. They are sulfite-free, too!

Garlic Powder

Garlic powder is used as a spice and flavoring..

Ground Cloves

Our cloves are small nailed shaped flower buds that are dried and then ground. They have a sweet and omewhat penetrating flavor.

Ground Nutmeg

Nutmeg is obtained from the seeds of a tropical tree species (Myristica fragrans). It allows us to add rich flavor to our products. Rest assured; it is safe for someone with a tree nut allergy.

Gum Arabic

Gum arabic is made from the sap of acacia trees. It is an all-natural gum that we use as a binder, emulsifier and stabilizer in our products. It also adds stretch to gluten-free dough as well as a chewy texture!

Honey

All natural honey! We use the light amber kind for delicate sweetening of our products.

Infused Dried Orange Peel

Our infused dried orange peels add great citrus flavor to our baked treats.

Inulin (Chicory Root Fiber)

Plant fiber derived from the chicory root plant, this ingredient helps keep our products moist and chewy!

Juice Concentrate (Grape, Apple, or Pear)

Flavorful juices extracted from grapes, apples and pears with no water added to dilute the juices. Using this nectar allows us to add less sugar to our products, bringing the perfect amount of sweetness. It helps keep them moist, too!

Konjac Flour

Konjac is derived from tubers of the elephant yam (a perennial plant) also known as amorphophallus konjac (hence the name). We use this ingredient in to add pliability and increase moisture retention.

Lactic Acid

The lactic acid is derived from sucrose (the organic compound commonly known as table sugar!). Don’t worry, no dairy in this ingredient!

Lentil Powder

Lentil powder is derived from the red lentil to allow our Plentils® to have a strong, sturdy and high protein base.

Light Buckwheat Flour

Lightly Salted Sunflower Seed Kernels

Just like it sounds; lightly salted sunflower kernels! We add a touch of sunflower oil and salt for extra flavor!

Malic Acid (Natural Flavor Enhancer)

Malic acid is a tart tasting organic acid that occurs naturally in apples. It gives green apples their unique sour “zing.”

Maltodextrin

Maltodextrin is a non-GMO corn that is used as a bulking agent.

Marshmallow Flavorrettes

Small marshmallow flavored nuggets made from white rice and natural sweeteners like honey, evaporated cane juice, and raisin juice concentrate, these melt when baked to provide add that sweet marshmallow flavor!

Millet Flour

Millet Flour is made from finely ground millet seed, is an ancient grain that is a common staple in India and Africa. Millet is high in riboflavin, b vitamins, and minerals. We combine it with other flours to create our signature gluten-free flour blend!

Molasses

Our molasses is a thick syrup that results from processing sugar cane into sugar.

Natural Chocolate Flavor

Derived from botanicals using plants and vegetables, this natural chocolate flavor is free-from gluten and all common food allergens.

Natural Flavors

We use only all natural flavors that are free-from gluten and all common food allergens. They are also free-from other common triggers including sesame, sulfites and ingredients derived from petrochemicals, like propylene glycol. Depending on the product, the natural flavors we use are apple, butter, caramel, cinnamon bun, chocolate, cookie dough, graham, marshmallow, mixed berry, strawberry and vanilla!

Natural Process Cocoa Powder

We use unsweetened cocoa powder, which is made from naturally processed cocoa solids that remain after chocolate liquor is pressed to extract cocoa butter. It is totally free of dairy and soy. Natural Rice Dextrin

This ingredient, which is made when rice starch is broken down by a common enzyme called amylase, acts as a preservative when combined with natural fruit juices. We use it to retain moisture, softness and freshness.

Natural Strawberry Flavor

Derived from botanicals using plants and vegetables, this natural strawberry flavor is free-from gluten and all common food allergens.

Onion Powder

Palm Oil

Our RSPO Certified Palm oil is made from the fruit of the oil palm. Semi-solid at room temperature, it helps some of our products maintain their delicious crunch! It also helps keep our treats stay fresher for longer.

Pineapples

Pineapples are a sweet fruit that has a high antioxidant content and a tangy flavor we just love. Ours are sulfite-free too!

Potato Starch

Potato starch is used as a carrier and emulsifier.

Pre-Cooked Quinoa Flakes

Quinoa flakes are quinoa that’s rolled to create a thin flake that we love to use in our treats! They add great nutritional value and texture to our products.

Puffed Amaranth

Used to add a soft crunch to our treats, amaranth is a natural plant that comes from densely packed flowers (did you know there are over 60 species of amaranth!)

Raisin Juice Concentrate

A flavoring agent that is used to add a touch of sweetness to our products.

Raisins

Nothing could be simpler, just grapes and the sun go into making raisins. Ours are sulfite-free too!

Raw Sunflower Kernels

Sunflower kernels are an excellent source of protein, dietary fiber, Vitamin E and other beneficial vitamins and minerals.

Rice Milk

Made from organic rice syrup, rice starch and rice flour, it is completely dairy-free! It helps create that soft, smooth texture to our products.

Rice Starch

Made exclusively from rice, it brings a great, smooth texture to our products.

Roasted Hulled Pumpkin Seeds/Oil Roasted Pumpkin Seed Kernels

Pumpkin seeds are flat, dark green seeds that are subtly sweet and “nutty” with a crunchy texture. They are a very good source of protein, monosaturated fats and minerals. We roast ours with light sunflower oil and salt for that delicious roasted taste!

Rosemary Extract

You might wonder what rosemary is doing in a cookie. This pure rosemary extract helps keep our products fresh and promotes a longer shelf life. It also contains healthy antioxidants.

Safflower Oil

Safflower oil is used as a processing aid.

Salt

We use good ol’ table salt just like you do at home. It is not iodized and therefore, contains no corn or corn byproducts.

Sea Salt

Our sea salt is an iodized salt and used as a flavor enhancer.

Sodium Acid Pyrophosphate

This is a light, white, very fine and unflavored all-natural powder that is commonly used as an ingredient in baking powder in many bakeries. When combined with baking soda, it causes the release of carbon dioxide, which is vital to the rise and spread of our treats while they bake. It is a slow acting leavening agent.

Spices

We use only all spices that are free of gluten and all common allergens (no: wheat, dairy, soy, egg, peanuts, tree nuts, fish or shellfish).

Sunflower Oil

Sunflower oil is used as a processing aid.

Sunflower Seed Butter

Made from ground roasted sunflower seeds, evaporated cane juice and salt, we use this tasty to add that “nutty” flavor to our products. It adds protein and also keeps them soft and chewy.

Tapioca Syrup

Tapioca syrup is made from the cassava tuber, or yucca root, a plant that is indigenous to the tropics of South America. The syrup is made when natural enzymes are introduced to the cassava tuber. This process is known as enzymatic hydrolysis. After enzymatic hydrolysis is complete, a sweet syrup is formed. Tapioca syrup is considered to be a healthy sweetener alternative.

Tart Cherry Dried Halves

Add a bit of sweet-tart cherry flavor to our treats!

Tomato Powder

Tomato powder is used as a flavoring agent.

Turmeric

Turmeric is derived from dried rhizomes of curcuma longa plant. Turmeric adds spices, flavor and color.

Unsweetened Chocolate

Vanilla

This vanilla extract comes from 100% vanilla beans grown in Madagascar, off the African coast. It is considered to be the highest quality vanilla available and adds a smooth and mellow sweetness to our cookies. It is not processed with any gluten-containing ingredients, making it totally safe for people with Celiac Disease to consume. While the vanilla is distilled with corn alcohol, all corn protein is removed in the distillation process. Thus, our vanilla contains no corn protein and is tolerated by most corn-free people. However, we certainly recognize the seriousness of food allergies and encourage you to make your own decision (or consult your doctor) regarding whether or not you feel comfortable eating this ingredient.

Vegetable Glycerin

Derived from palm, we use vegetable glycerin to keep some of our products soft and chewy.

White Rice Flour

This great basic is milled from polished white rice. Because it has such a bland flavor, it is perfect for baking. Though it does not have as much nutritional value as the other flours we use, we add it to the mix to lighten the flavor and texture of our products.

Whole Sorghum Flour

Sorghum is also known as milo and grist millet. A grain-like grass, this up-and-coming whole grain gluten-free ingredient is a major human food source in Africa and India. It adds great taste and nutrition to our irresistible cookies and snack bars. Sorghum is high in insoluble fiber, which combined with protein and starch in the sorghum endosperm, makes it more slowly digested than other cereals. The slower rate of digestibility of sorghum products may be beneficial to diabetics. We are proud to be among the first products marketing in the U.S. that uses sorghum as a main ingredient. Our white milo sorghum is organic and milled to our specifications in North Dakota, where it is grown.

Xanthan Gum

Xanthan gum helps to prevent our goodies from crumbling (a job normally performed by gluten in mainstream foods). Xanthan comes from the dried cell coat of a microorganism called Zanthomonas campestris. Though it sounds chemical, it is actually an all-natural ingredient. Xanthan gum is derived from the fermentation of corn sugars; however, all corn sugars are removed in the processing of xanthan gum. Xanthan gum contains no corn protein and is tolerated by most corn-free people. However, we certainly recognize the seriousness of food allergies and encourage you to make your own decision (or consult your doctor) regarding whether or not you feel comfortable eating this ingredient.
